La Mar Celebrates 20 Years of Peruvian Culinary Excellence with “Around the World” Global Menu

Conceived by Gastón Acurio, renowned chef, restaurateur, author, and one of the world’s leading advocates for Peruvian cuisine, La Mar Around the World honors the legacy of the original La Mar location in Lima, Peru, while celebrating the diversity and creativity that has shaped the brand’s global growth.

“This menu is more than a collection of recipes—it’s a heartfelt tribute to the people, places, and stories that have defined our 20-year journey,” said Gastón Acurio. “Each dish represents the vibrant traditions and values that shape the essence of Peruvian cuisine, interpreted through the lens of the chef who created it. Together, they form a collective vision of what it means to showcase Peru’s rich culinary heritage and the country’s emerging gastronomy on the world stage.”

Over the past two decades, La Mar has evolved from a single cebichería in Lima into a worldwide celebration of Peruvian cuisine. Today, with restaurants in ten cities across eight countries, it stands as a testament to the global appetite for food that is authentic, ingredient-driven, and rooted in heritage.

The La Mar Around the World menu brings this journey full-circle with 10 distinctive dishes – each thoughtfully chosen by La Mar’s executive chefs, from current or past menus, each chosen, for its personal significance as a reflection of the spirit of their restaurant and connection to its city. 

Following is a timeline of La Mar openings and the signature dishes that will be featured on this special commemorative “Around the World” menu:

2005 – La Mar debuts in Lima, Peru

  • Pesca Nikkei, crispy catch of the day served with Nikkei sauce
  • Chocolate Mousse made with Peruvian cacao and lucuma ice cream

2008 – La Mar opens locations in San Francisco, CA and Santiago de Chile

  • Cebiche of white fish, with sunchoke leche de tigre, and crispy chips,
  • Causa de Centollo, a layered dish of king crab, avocado, and huancaína sauce

2010 – La Mar opens in Bogotá, Colombia

  • Arepa Marina, Shellfish and Nikkei sauce on a traditional corn arepa

2014 – La Mar opens in Miami, FL

  • Chaufa Aeropuerto, Peruvian-Chinese stir-fry, quinoa, rice, and a shrimp omelet

2018 – La Mar opens in Doha, Qatar

  • Pulpo Brasa, grilled octopus over truffled potato purée

2023 – La Mar opens in Dubai, United Arab Emirates

  • Conchita Poderosa, a composition of scallop, sea urchin, and avocado in an olive oil emulsion

2024 – La Mar opens in Bellevue, WA

  • Tiradito of seared tuna, Nikkei aioli, and passion fruit

2025 – La Mar opens in Madrid, Spain

  • Hamachi Nigiri, topped with crispy calamari and ponzu

Together, these dishes are more than a tasting menu, they are a passport through La Mar’s global evolution, highlighting how Peruvian cuisine has not only traveled the world, but taken root and flourished in every city it’s touched. Guests who order the La Mar Around the World menu will receive a custom envelope containing the printed menu and an illustrated map that traces the story behind each dish, transforming dinner into a guided culinary journey rich with personal and cultural narrative.

The La Mar Around the World menu also aligns with La Mar Lima’s “20 Años de Fiesta” campaign, a year-long celebration of the original restaurant’s two decades of culinary leadership.
